Blueberry Meringue

For the cup of mixed berries try to choose a mixture of colours and flavours to contrast with the blueberries.

Allow the frozen berries to partially thaw. Reserve a mixed handful of berries for garnish. Lightly whip the cream. Break up the meringues into bite-sized pieces. Mix all of the ingredients together in a large bowl. Pile onto a serving dish and decorate with the reserved berries and a sprinkling of icing sugar. Serve immediately.


Serving People:
  • cream: 300 ml
  • frozen blueberries: 3 cups
  • fresh or frozen mixed berries: 1 cup
  • birds nest meringues, crushed icing sugar, to decorate 6
